Couscous and edemame soup (or whatever you want to call it!) 😉
1/2 cup Edemame
.75 cup couscous
1/2 cup diced tomates with green chilies
1 cup vegetairan vegetable broth
Throw all ingredients in a pot ( except spinach). Bring to a boil…..simmer for a few minutes. Drop in the spinach until it wilts. Put it in your bowl. Eat it. 🙂
It turned out pretty darned tasty if I do say so myself….
